Sweet Corn Salad

Summer Sweet Corn Salad with Beau Monde Dressing is a unique and delicious addition to your summer menu made with the unique flavors of Beau Monde Seasoning. Summer sweet corn, fresh mozzarella, and flavors of lemon and black pepper level up this simple salad.

I learned of Beau Monde seasoning from a southerner I worked with at an ice cream shop in Chicago called The Zephyr Cafe. He added it to his burgers, his salad dressings, and basically everything.

I started making salads with it that were reminiscent of a simple salad I had once in Nice, France.

The salad I had in France was served alongside a simple omelette and it was acidic and had a peppery goodness to it. This Summer Sweet Corn Salad with Beau Monde Dressing will be unique and wonderful to whomever you serve it to!

Beau Monde Seasoning

The Seasoning

Beau Monde Seasoning is a mix of of celery, onion, and salt and has a slight sweetness to it. I have a hard time finding it in regular grocery stores, but I HAVE found it.

You may just never have looked for it, but I do luck out with getting it on Amazon.

It is by a brand called Spice Islands, and it is $7.99. You can use this seasoning in literally almost anything.

It is GREAT in salad dressings and it is also good on chicken and in burgers.

The flavors in this seasoning just pair really well with the ingredients in this Summer Salad. I love the mix of sweet corn and the Beau Monde seasoning.

I know you will love this seasoning once you add it to your pantry.

Better As It Sits

It may seem counterintuitive to let this salad sit, but it gets better as it does. You DO NOT mix the lettuce in with the dressing for when it sits.

You use the lettuce as sort of a barrier for the dressing and other ingredients. Trust the process with this.

You DO have to use FRESH romaine. Do not be trying to use some dusty old romaine and then come back and tell me the lettuce was wilted.

When you assemble this salad it should be a brand new romaine.

Fresh Corn

I really encourage you to use fresh corn for this recipe. I use this awesome corn cutter thing I got on Amazon.

No need to buy this, you can use a knife, but it gets SO much corn off the cob. If you do not want to use fresh corn, I would use frozen, thawed, and drained corn as a sub.

Chicken and Salad

IF I had to pick a perfect summer meal it would be this salad and some delicious grilled chicken. My simple grilled chicken tenders would be lovely on top or alongside this salad.

I also think my bacon wrapped chicken tenders would be awesome.

Summer Sweet Corn Salad with Beau Monde Dressing Recipe

Summer Sweet Corn Salad with Beau Monde Dressing, a unique summer salad made with fresh corn, mozzarella cheese, and a dressing made with classic Beau Monde Seasoning plus fresh lemon, chives, and mayonnaise. The perfect fresh bite for warm days.

Ingredients

  • 2 Lemons
  • 1/4 cup of your favorite Mayonnaise
  • 8 to 10 Chives
  • 16 ounce container of fresh Mozzarella Balls
  • 3 tablespoons of a light tasting oil like Vegetable Oil or Avocado oil
  • 2 heads of FRESH Romaine Lettuce
  • 2 ears of fresh Corn
  • 2 Avocados *optional
  • 1/2 Red Onion sliced thin *optional
  • 1 to 2 tablespoons of Beau Monde Seasoning *linked and pictured in post **season to taste
  • Cracked Black Pepper

Instructions

  1. This salad is best when it sits for 4 to 6 hours after being assembled so plan accordingly.
  2. Wash and dry the romaine lettuce and cut into bite sized pieces.
  3. In a large bowl, add the juice from the two lemons, finely slice the chives and add to lemon juice, add the mayonnaise, oil, Beau Monde seasoning, and whisk well. Start with a small amount of the seasoning and taste and add more until it is to your liking.
  4. To the dressing, add the fresh mozzarella. I leave the balls whole, you can dice the cheese if you like. Cut the corn from the cob and add this to the dressing. If you are using the avocado, dice and add as well as the red onion if using. Give this all a good toss.
  5. Top the bowl of dressing and other ingredients with the chopped romaine, but DO NOT mix it. Let it sit on top of the rest of the ingredients. Cover and refrigerate for 4 to 6 hours.
  6. When ready to serve, remove from fridge, toss, and top with lots of black pepper.
