The History Of This Recipe
When my cousin made this dish for us for the very first time, we were actually hesitant to eat it when she told us what was in it. This Chicken Mirabella is a sweet and savory chicken dish that has olives AND prunes.
Trust me, I know it sounds weird but the flavors of this dish are one that you will not soon forget. It is perfect all on its own and even better with some crispy oven roasted potatoes. Here is how to make the Chicken Mirabella.

Why Prunes?
Everyone always freaks out when they read that there are prunes in this recipe.
But guess what?
Prunes are just dried plums! Why should we think they’re any grosser than apricots or other dried fruits?
The prunes add a savory sweetness to this recipe. You will be shocked how good they are in this dish.
Also you don’t have to worry too much about the volume of fiber prunes are known for. These prunes do not have the same cleansing effect once they are baked in this dish as they do when they are raw.
Olives Of Your Choice
You can use any olives that you choose for this recipe. I sometimes also like to add capers and roasted red peppers.
Another great addition would be some sun dried tomatoes in the oil they come in. All of these are really great options for this recipe. You can eat it with couscous or roasted vegetables. I also like to serve this as a sandwich sometimes.
Toasted ciabatta makes a great bread choice for the sandwich and sticking hummus in there really takes it to the next level.

Make Sure You Marinate Overnight
This dish needs to marinate overnight, so if you’re planning on making it get started one day in advance. You can get away with marinating it for 4 hours but the flavor won’t be AS strong. I really prefer to let this marinate overnight.
Keep in mind that if you are using very thin pieces of chicken, you will want to marinate it for LESS time. The salt from the other ingredients will start to cure very thin chicken and your meat will be tough.

Ingredients
- 3 Boneless, Skinless Chicken Breasts, I cut mine into smaller, thinner pieces. You can also use chicken tenders or chicken thighs
- 1/2 C of Marinated Artichokes
- 1 C of Pitted Olives, I used Green and Greek
- 2 Cloves of Garlic Minced
- 1/2 C of White Wine
- 1/4 C of Olive Oil
- 1/3 C of Apple Cider Vinegar
- 8 Pitted Prunes
- 2 T of Dried Italian Seasoning
- 1/4 C of Brown Sugar
Instructions
*This chicken needs to marinate overnight
- Combine wine, olive oil, vinegar, garlic, olives, artichokes, prunes, and Italian seasoning in a bowl and whisk together.
- Add chicken to a ziploc bag and pour mixture over the chicken. Squish around and place in fridge overnight. IF you like, you can slice the chicken into thinner pieces if you have very thick chicken. You can also use chicken tenders to reduce cook time. Adjust the cook time for thinner chicken. *see the paragraph in the post about marinating this when you use very thin chicken pieces.
- The next day, spray a casserole dish with non stick spray, dump the chicken mixture into the casserole and sprinkle with the brown sugar.
- Bake at 350 degrees for 45 minutes to One Hour. *the cook time will depend on the thickness of the chicken. I suggest using a meat thermometer.
- Serve with Couscous and/or roasted veggies
