Noodle and Dumpling Soup

Noodle and Dumpling Soup is a wonderful meal that cooks up quickly. It uses very simple ingredients like twenty five cent ramen noodles and a bag of frozen pot stickers.
I love creating recipes like this that can be made with Dollar Store ingredients so everyone can enjoy a good meal on a budget.

The Dollar Forest for the Dollar Trees
I was actually turned on to this recipe by my Grandma when she still lived alone. She would grab the ramen and the frozen dumplings from the dollar store.
Believe it or not, most dollar stores have the best frozen dumplings. I will post a picture below of the ones I always buy from Family Dollar. They also sell this brand and others just in a smaller bag at the Dollar tree.
This was a very easy dish for my elderly Grandma to make for herself that was also warm and comforting and had some healthy things in it too! This Noodle and Dumpling Soup was also a dinner that did not require her to stand up cooking for a long time.

Use The Broth
I like to use the low sodium chicken broth for this recipe because it adds more flavor to the soup and with the addition of the dumplings, you have a little more liquid to cook the dumplings in. You also can use a lid on the pot to help steam the dumplings along.
Just be sure to cook them long enough so you thaw and heat them. I believe most of the frozen dumplings are fully cooked and just frozen.
Brown Them First
If you want to take a couple of extra moments to make this soup, you can brown the dumplings in a skillet with oil before adding them to your soup. This adds another layer of flavor and texture to your soup, but it is not required for this soup to be delicious.

Green Onions For Life
I love green onions. My recipe calls for 6 green onions but I sometimes use a lot more.
I like to add them into the soup but I also cut extra for the top. You can also use chives.
There are times that I have fried garlic and onions on hand and I use those to top the soup too.

Optional Mushroom Powder
I love using this mushroom powder that I get from Amazon. I linked it in the previous sentence for you.

This just adds an extra layer of flavor to this dish. I also use this mushroom powder for my Green Bean Casserole and my Salisbury Steak.
Both recipes are delicious.

Soy Sauce Ramen
I use the soy sauce flavored ramen packets but you can use any seasoning of the ramen that you prefer. The shrimp and chicken are just as good for this recipe.
I have also spiced things up and used the spicy chili ramen for this recipe and it is very good if you like spice.

Noodle and Dumpling Soup Recipe

Noodle and Dumpling Soup is a budget meal that tastes like a night out. The addition of green onions and chili sauce makes this extra delicious.
Ingredients
- 2 to 4 packets of packaged ramen (I prefer soy sauce flavor)
- 1 twenty-four ounce bag of frozen potstickers (I use the pork and vegetable)
- 4 cups of low sodium chicken broth
- 1/2 teaspoon of dried poultry seasoning
- 4 to 6 green onions, sliced very thin
- handful of fresh spinach *optional
- *optional 2 teaspoons of mushroom powder (linked in post)
- chili garlic sauce or chili crunch
Instructions
- Bring the four cups of chicken broth to a boil, add your ramen noodles but not the seasoning and simmer until softened. After the noodles have cooked for the first 3 minutes, add as many of the frozen dumplings that you want to. Simmer with the lid on for 7 to 8 minutes.
- Add in the packets from the ramen, add the poultry seasoning, and the mushroom powder if using. Stir well and simmer for another couple minutes.
- Add in the handful of spinach if using and the green onions. Toss to combine. Let the spinach wilt.
- Serve in a bowl with the chili garlic sauce or chili crisp on top.
- I also sometimes add fried onions or fried garlic to the top.
