This recipe for Easy Sausage and Peppers does the impossible. It hits all of the big three.

What are the big three? They’re the three qualities you want out of a meal.

1: You want it to be tasty.

2: You want it to be affordable.

3: You want it to be, at least somewhat, good for you.

Normally you have to pick two, but with this meal you get all three.

Toss It All In

You’ll see a printable version of the full recipe complete with ingredients and instructions later in the post, but first I just want you to get a sense of how easy this recipe is.

Let’s say you want some of the same flavors you might get from a jambalaya or a paella but that’s just not in the cards. Maybe you aren’t confident enough in your abilities or you don’t want the carbs or you just don’t have the energy tonight.

That’s where these Easy Sausage and Peppers come in. You just rough chop all the ingredients and toss them in the dish, stick the dish in the over and you’re good to go!

It does take a while to cook, however, so it’s not the ideal recipe if you’re hungry right now and want something quickly.

The prep time is pretty minor, however, so as long as you put it in the oven early enough, you can go take care of other tasks or just sit back and relax while that tasty sausage sizzles up.

Savory Sides

While this dish is delicious all on its own, it pairs well with all sorts of sides.

If you’re trying to keep it lighter on carbs, you could opt for a an easy vegetable like asparagus or broccoli that you can season and stick in around twenty minutes before the Easy and Sausage and Peppers are done.

On the other hand if you’re up for getting some carbs in there, you can go wrong serving this over rice or The Creamiest Mashed Potatoes Ever.

Sausage and Peppers

An easy, one dish meal.

Prep Time 10 minutes
Cook Time 1 hour 30 minutes
Total Time 1 hour 40 minutes

Ingredients

  • 2 lbs of Italian sausage, I use one mild and one spicy
  • 3 cups of good quality tomato sauce in the can
  • 2 jars of marinated artichoke hearts
  • 3 to 5 bell peppers, I use a variety of colors
  • 1 large yellow onion
  • 3 to 5 cloves of crushed garlic
  • `2 russet potatoes, peeled and sliced
  • 1/4 cup of sugar
  • Salt
  • Pepper
  • Oregano
  • Garlic and Onion Powders
  • olive oil

Instructions

  1. Rough chop your peppers and onions, add them to a casserole dish, toss with a little olive oil, season with salt, pepper, garlic and onion powders and oregano.
  2. Squeeze the sausage out of the casings and into the casserole, they don't have to be even pieces.
  3. Toss in the garlic and sliced potatoes, season again and toss with a little more oil.
  4. Mix the tomato sauce with 1 cup of water, add the white sugar, mix, season with the salt, pepper, oregano, garlic and onion powders, pour over the sausage peppers and potatoes.
  5. Add the two jars of marinated artichokes with the juice, mix this all, cover with a lid or a piece of foil.
  6. Bake for about one hour at 375 degrees, some ovens take longer, uncover, stir carefully and bake at 375 degrees for about another 30 minutes. You will know when its dine when the sausage is cooked and the potatoes are soft.
