Tangy Mustard Sausage Bites

Tangy Mustard Sausage Bites make a delicious appetizer. These sausages bake up in a mustard based bbq sauce. The sauce and sausage gets all caramelized and each bite is heavenly. These are great for game day apps. You can assemble this ahead of time and bake when ready or put in your slow cooker for a no fuss recipe.

Cutting Your Links

This time I bought some hot dogs this time that were uncured, to make this recipe. I did not love them in this recipe. I will stick with cheddar smoked sausage for this recipe or any type of smoked sausage. That being said, you can use any sausage you like. I make sure to cut the links into 2 inches pieces, approximately and then i make slash marks on an angle down the length of the sausage. This is so the sauce bakes up onto each link. It would be my recommendation not to use super thick links.

The Mustard Sauce

The sauce bakes up and slightly thickens as this cooks. You want to make sure that your sausages are as submerged in the sauce as much as possible. This way this will all bake up tangy and nice and caramelized. If you want to use a larger pan for this dish, you will get a thicker sauce.

Tangy Mustard Sausage Bites

Tangy Mustard Sausage Bites make a delicious appetizer. These sausages bake up in a mustard based bbq sauce. The sauce and sausage gets all caramelized and each bite is heavenly. Ingredients

  • 2 packages = 12 links of sausages of your choice, I recommend smoked sausages, smokey links or the cheddar sausages
  • 1/2 cup of yellow mustard
  • 2 heaping tablespoons of brown, grainy mustard
  • 1/4 cup brown sugar either light or darl
  • 1/4 of a sweet vinegar like rice wine vinegar or white wine vinegar
  • 1 tablespoon of honey or hot honey
  • 1/2 tablespoon of garlic powder
  • 1/2 tablespoon of onion powder
  • 1/2 teaspoon of cayenne pepper (optional or adjust to taste)
  • 1 tablespoon of dried minced onion
  • 1/2 teaspoon of celery seeds
  • 1/4 teaspoon of celery salt
  • pinch of cinnamon

Instructions

  1. Remove sausages from package and pat dry with a paper towel. Cut into 1 1/2 in pieces, I cut each sausase link into four pieces. Then make slash like cuts on an angle all the way down the length of each sausage but do not cut all the way through. Place these sausages in a baking dish, 9 x 13 is best but you can use a smaller one if it is all you have.
  2. Preheat your oven to 400 degrees
  3. In a bowl combine all of the other ingredients, whisk until smooth and then taste and adjust seasonings. You may want it slightly sweeter and if so, you can add more brown sugar or honey. *This sauce does have a stronger vinegar taste but some of that will cook off as it bakes.
  4. Pour this mustard mixture over the sausages and bake. I baked these about 30 minutes, every oven will bake slightly differently. Pull them when the sausages are caramelized in the sauce. *you may need a longer cook time if you are not using already cooked/smoked sausages
