Bacon and Onion Fried Rice

I have a friend who loves my food and I recently offered to make her a special meal. I suggested this Simple Bacon and Onion Fried Rice because I have been wanting to make it again for some time, and because I knew she would love it.

This dish is so simple to make but feels like a real treat when you eat it. I love the addition of the salt bacon and savory onions.

This isn’t a very complicated recipe so I will share a printable and complete recipe below. But first, a quick tip.

Cooking Your Rice

Leftover rice is the perfect rice for making fried rice. You may have heard that it’s risky to eat leftover rice, but if it’s only a day or so old and you properly stored it and will properly reheat it, you should be OK.

This isn’t medical advice, however, and it’s possible you have a condition that means you should be more careful.

That being said, this is a perfect dish to make with any rice you have leftover the day after a side dish or if you made extra when preparing Greek Chicken Lemon and Rice Soup.

Your Instant Pot is a great way to make rice quickly and easily if you don’t have a “proper” rice cooker.

Simple Bacon and Onion Fried Rice

Bacon and Onion Fried Rice

This recipe is great for leftover rice. The salty bacon and caramelized taste of the onion add great flavor with the soy sauce and green onions. This is a great side dish and also can be served as a main course. Especially with a fried egg on it.

Ingredients

  • 4 Cups of Cooked White Rice (day old rice is best)
  • 1 lb of cooked, crumbled bacon
  • 1 large sweet onion, diced
  • 6 to 8 green onions sliced thin
  • 1 cup of frozen peas
  • 1 pint of diced mushroom
  • 1.5 Cups of Diced Pea Pods
  • 1/2 cup of soy sauce
  • 2 teaspoons of sesame oil
  • 1/4 cup of cooking oil, I used avocado oil
  • 2 eggs

Instructions

  1. Add some cooking oil and or butter to a large skillet. Add the diced mushrooms and onion and sauté until the liquid is cooked from the mushrooms and the onions are golden brown and soft. Add the pea pods and sauté for 5 minutes.
  2. Add the sesame oil to the pan and more butter or cooking oil and slowly add the rice cup by cup, sautéing as you go. The rice won't take on a ton of color but you will notice it get slightly brown.
  3. When the rice is all added and you have sautéed for a few minutes, add your crumbled bacon, your sliced green onions and sauté again for a few minutes.
  4. Next add your soy sauce and continue to stir and let the soy sauce cook into the rice. You can add more soy sauce if you like to get it the color and flavor you like. Add in your frozen peas and let heat through.
  5. When the soy sauce is absorbed, make a well in the center of the pan and crack two eggs into the center and scramble into the rice.
  6. Serve with a sprinkle of sliced green onions over the top.
  7. You can also add a fried egg to the top for a complete meal.

Get Creative

I used the bacon, onion, and mushrooms in this recipe but you can substitute any veggies and proteins that you prefer.

I also gave measurements for soy sauce but you will find if you taste it as you go that you may want to add more soy sauce for your preference.
