Fried Pork Chops with Blue Cheese Sauce are the perfect balance of texture and flavor, featuring crispy breadcrumbs fried in butter. The decadent sauce made with blue cheese and savory bits envelops the pork chop and provides a heavenly balance with honey and black pepper.

I am a true blue cheese addict and try to find any way I can to incorporate it in my recipes. You may have made the Chopped Blue Cheese Salad, a fan favorite on Tipsy for sure.

This pork chop recipe came about on accident when I was at our home in rural Michigan and planned to make chops and gravy and came to realize I had no gravy. Rather than drive to town, I came up with this happy accident.

The Broth Makes The Sauce

If you have made any number of my recipes you know I am a huge Better Than Bouillon fan. I am in no way sponsored by them, I just love keeping a variety of their products on hand.

I think they add an “all day cooked” taste to the recipes without having to cook all day.

The product I use from their line for this recipe is the mushroom base. It adds a great flavor.

You can also use the veggie base, onion, or the beef. This makes the blue cheese sauce SO GOOD.

Dry Your Chops

It is very important to dry your pork chops very well before breading them. This is so the breadcrumbs stick to the chops and do not fall off when frying them.

You can also dredge them first in flour before adding them to the egg mixture and then the crumbs. I find that if you dry them well enough you do not need to add this step, but it may help if you are having problems getting your breadcrumbs to stick.

It is also important that you let the chops sit on the counter to come to room temperature before you fry them up. This helps get a good fry on the chops.

Remember you are cooking them longer if you are worried about them sitting out. I have always done it this way and it is just fine.

Fried Pork Chops with Blue Cheese Sauce Recipe

Who doesn't love a fried pork chop? Add in a creamy blue cheese sauce to take these chops to the next level.

Ingredients

  • 4 bone-in Pork Chops
  • 2 cups of seasoned Bread Crumbs
  • 1 cup of Milk
  • 2 Eggs
  • 1 cup of crumbled Blue Cheese
  • 2 cups of Beef or Pork Broth *brand I use pictured in post
  • 1/2 tablespoon of Dried Chives
  • 1 teaspoon of Black Pepper
  • 4 tablespoons of Butter
  • 2 tablespoons of your favorite Cooking Oil *I use vegetable oil
  • 2 tablespoons of Honey
  • Splash of Heavy Cream *approximately 2 tablespoons
  • Coarse Salt

Instructions

  1. Remove your pork chops from the package and pat them very dry with a paper towel.
  2. Set up a breading station. In one bowl whisk the eggs with the milk and in a second bowl add your seasoned bread crumbs.
  3. Dredge your chops in the egg mixture and then into the breadcrumbs making sure to get them well covered on all sides with the bread crumbs. Set the chops aside for about 15 minutes, on a plate, on the counter.
  4. Prepare your skillet for frying by adding the 2 tablespoons of the butter and all of the oil listed in the ingredients.
  5. Add your chops when the butter and oil is hot but not smoking. If you have a smaller skillet, you may have to work in batches. Heat your oven to 375 degrees while you fry up your chops.
  6. Fry your chops for about 5 to 7 minutes on each side, then add them to a baking sheet. Every pan and stove top is different, so you want to fry the chops until they are golden brown, but not too dark, as they will finish cooking in the oven. Cook time may vary depending on your stove and pan that you use.
  7. When the chops are fried on both sides and the oven is heated, place them in the oven for approximately 20 minutes. I pull the chops when the internal temp is about 130 degrees. They will keep cooking ten more degrees once out of the oven.
  8. While the chops are baking, reduce the heat of the skillet that you fried the chops in and add the broth. Let this come to a simmer and use your spatula to scrape up the bits on the bottom of the pan. Simmer on LOW for about 5 minutes. Add the remaining butter and then the blue cheese crumbles. Whisk until well combined, simmer for a few minutes. At the very end, whisk in the heavy cream, the dried chives and a little black pepper.
  9. Pull the chops from the oven, sprinkle with coarse salt, black pepper, and then drizzle with the honey.
  10. Serve the chops smothered in the blue cheese sauce.
