Easter Bunny Inspired Stuffed Peppers are the snack that will definitely have the floppy hopper himself stopping at your home. A savory and decadent cream cheese is stuffed into baby bell peppers for a delicious and moderately healthy snack that kids can even help prepare.
I made these Easter Bunny Inspired Stuffed Peppers for the neighbor’s kids a few years ago. While they are slightly a labor of love, they are so cute, so fun, and absolutely adorable to see on your holiday spread.
If I was having kids for Easter, I would make these and have a whole bunny themed spread. I am having all older people, but I was thinking of making these to stick in a Bloody Mary, as a garnish.

The Hardest Part Of The Recipe
Truly the hardest part of this recipe is trying to find enough orange baby bell peppers. Aldi usually has bags of mini sweet peppers that are quite affordable, they just come with yellow and red peppers as well.
You may have to buy more than one bag. I did gather up a couple of recipes that you can use the other colored peppers for:

Keep It Neat
I encourage you to keep some dampened paper towels around when you are stuffing these peppers so that you can wipe them up as you go. This has the potential to get messy fast, but if you are prepared with the wet paper towel, you can wipe up as you go and keep it neat.
That being said, these will not be perfectly clean so keep that in mind when you set out on this pepper endeavor.

Top Of The Parsley To Ya!
Friendly reminder that fresh parsley will wilt. Be sure to save the parsley until right before serving.
When I buy the parsley, I do not wash it while it is being stored. I wash and dry it right before using.
I do fill a cup with water and place the bunch, stem side down, into the water and then keep the whole thing in the fridge.

Easter Bunny Inspired Stuffed Peppers Recipe

The perfect festive Easter appetizer. Easter Bunny Inspired Stuffed Peppers take a cheerful orange mini pepper and stuff it with a flavorful cream cheese. A garnish of fresh parsley on top to make it look like a carrot adds color, flavor, and festivity.
Ingredients
- 14 to 16 Orange Mini Peppers *these are typically sold in a bag mixed with red and yellow mini peppers so you will have to buy two or more bags and then use the other colored peppers for something else
- 16 ounces of Cream Cheese, softened
- 1 tablespoon of Mayonnaise
- 1 packet of Good Seasons Italian Dressing mix (0,7 ounce)
- 1/2 tablespoon of Onion Powder
- 4 Green Onions very finely minced, both white and green parts
- 1 teaspoon of Celery Salt
- 1/2 teaspoon of Paprika
- Pinch of Black Pepper
- 1 bunch of curly leaf Parsley
- *all seasoning measurements are a suggestion and can be adjusted to your preference of taste or dietary needs
Instructions
- In a bowl or stand mixer, add your cream cheese, mayonnaise, Good Seasons packet, onion powder, celery salt, paprika, and black pepper. Mix on high for 5 minutes or until the cream cheese mixture is light and fluffy. Fold in the green onions. Be sure the green onions are very finely sliced and incorporated into the cream cheese.
- Wash your orange mini peppers, trim the stems off the top, and make one slit on one side to be able to stuff the pepper. Some may have a few seeds, carefully remove these if they are present.
- To prep to stuff the peppers, keep a couple of damp paper towels on hand.
- Fill each pepper with approximately one tablespoon of the cream cheese mixture. It is easiest to use a butter knife. You can use the damp paper towels to wipe up the pepper after each fill so that it is clean on the outside of the pepper. Press the opening of the pepper closed slightly.
- You can refrigerate these stuffed peppers overnight if needed before adding the parsley.
- When ready to serve, wash and dry your parsley and put a stalk in the top of each pepper to make it look like a carrot. Be sure to do this step right before serving to make sure the parsley doesn't wilt.
- Serve on a platter as an appetizer or part of your brunch spread.
