A Simple Meal That Feels Special

Make this Chinese Omelette when your food budget is tight since it feels special, but won’t break the bank. A simple mix of eggs, soy sauce, celery, green onions, and any protein you choose comes together quickly and is perfectly paired with a simple side salad like arugula with garlic vinaigrette.
My Grandmother was a person who passed down many recipes to me. If you have followed me for some time, you may know of her famous Chicken Swiss Bake, or her Polish Hamburgers.
Those are two delicious recipes, but she also passed down many quick and easy recipes that won’t break the bank. I recently found this recipe for Chinese Omelettes in her recipe binder and I just had to make it.
It was a hit with me and Mister Tipsy.
The recipe made me smile thinking of how my Grandma loved Chinese Take Out. Her and my Mom always ordered Egg Foo Young.
It was something I never much enjoyed, but they sure did. When I saw this recipe in her recipe collection, I knew she probably enjoyed making this at home when she didn’t order take out.
I know you will love it as much as we did.
Protein Versatile
This omelette is very versatile. You can use any protein you choose.
My Grandma’s recipe called for canned crab. I do not like canned crab so I chose to use a finely diced ham.
I think this recipe would be great with any protein. Next time I will try fresh crab or maybe some variety of crumbled pork sausage.

Celery Seems Weird
I already know that I am going to hear comments about the celery when I post this on Facebook. I can understand that it does seem strange, but I can assure you that this adds such great flavor to this omelette.
It is important to make sure it is very finely diced. If you do not have great knife skills, pulse the celery in the blender.
The celery adds a fresh and bright flavor to this Chinese Omelette. I also enjoy the crunch of the celery in the egg.
Trust me and try this with the celery. I know the celery would be a great compliment to the canned crab if you choose to use it.

Salt Lovers Unite
I am a soy sauce lover. I have no idea why I never thought to add soy sauce to my eggs since it is SUCH a great addition.
The fermented flavor of the soy sauce really pairs well with the eggs. For years I cooked and babysat for a Taiwanese family who introduced me to the best Soy Sauce I ever tasted called Wan Ja Shan.
I have actually seen it at quite a few stores and I also see that they sell it on Amazon. I was a lifelong Kikkoman user, but this other soy sauce took things to next level.
Literally ANY soy sauce will be good in this omelette, I just thought I would share what kind I use since a lot of you ask me about products I love.

Dry On The Side
There is a step listed in the recipe card about cutting and flipping the eggs when the sides start to dry. I shared a picture above of what this looks like.
The omelette will be slightly “juicy” in the center when it is time to flip. Try not to fret about this.
It will be ok even if the omelette gets messed up when you flip it. If you are very nervous about this step, you can preheat your oven to 300 degrees and finish off this dish in the oven if you use a oven safe skillet.

Just A Salad

The perfect side to this omelette is a simple arugula dressed in a garlic vinaigrette. I love this Garlic Expressions dressing pictured, I buy it by the three pack at Costco.
The arugula is very peppery by nature which is a great compliment to the Chinese Omelette. Aldi has a very good dupe of this dressing.
You will see it in the salad dressing aisle with hunks of garlic floating in it. It has a black label.

Chinese Omelette Recipe

When you don't know what to make for dinner and the budget is tight, this Chinese Omelette is the recipe you need. Made with simple ingredients like eggs, soy sauce, diced celery, green onions and a protein of your choice, this omelette hits the spot. Serve with a simple side salad and you have a feast to enjoy.
Ingredients
- 5 Eggs
- 2 teaspoons of Soy Sauce
- 1/2 cup of finely diced Celery
- 2 Green Onions, finely sliced
- 1/2 cup of a Diced Protein of your choice (Ham, Sausage, Shrimp, Crab)
- 2 tablespoons of Butter
- 1/2 tablespoon of Cooking Oil
Instructions
- Whisk your eggs really well, add in the soy sauce and beat together.
- Finely dice your celery and whichever protein you want to use. I use ham but canned crab meat or finely diced shrimp would also be really good.
- Finely slice both the white and green parts of the green onion. Fold this into the egg mixture.
- Add the butter and the cooking oil to a smaller sized skillet. I use an eight inch skillet. When the cooking oil and butter are hot, but not smoking, add the egg mixture.
- When the omelette starts to dry at the edges and is semi cooked in the center, cut the omelette into quarters.
- Flip each quarter, one at a time.
- Turn off the heat, and let the omelette finish cooking slowly as the pan begins to lose heat.
- Add salt and pepper if you like.
- Serve with a simple arugula salad dressed in a vinaigrette.
*Cracked black pepper is great all over the omelette and the salad
