This Lunchbox Cheese Sandwich turns a simple deli sandwich into something extra special with creamy celery salt spread, thick slices of fresh deli cheese, crisp iceberg lettuce, juicy tomatoes, and crunchy dill potato chips. Served on soft brioche bread, this sandwich has that nostalgic old school lunch counter flavor that somehow tastes even better on a warm summer day.
This Lunchbox Cheese Sandwich was inspired by the classic lunchbox sandwiches from childhood with a slightly elevated twist. I wanted that nostalgic soft sandwich that almost sticks to the roof of your mouth in the best possible way.
Then I loaded it with thin sliced deli cheeses, crisp vegetables, creamy celery salt spread, and crunchy dill potato chips on thick soft brioche bread.
A Sandwich Origin Story
There is something about a classic cold cheese sandwich that just hits differently in the summertime. This sandwich reminds me of something you would get at an old luncheonette or packed into a cooler for a day at the lake.
The creamy celery salt spread, soft brioche bread, crisp iceberg lettuce, fresh tomatoes, and crunchy dill potato chips make this feel nostalgic while still being unbelievably good.
The key to this sandwich is using really good sliced cheese from the deli counter. I used a combination of sliced Muenster cheese and Land O Lakes yellow American cheese, sliced fresh from the deli instead of pre-packaged.
The texture and flavor make a huge difference.

Crunchy Chips On A Sandwich
The crunchy dill potato chips are what truly take this sandwich over the top. The sandwich itself is soft, creamy, and packed with that nostalgic deli flavor.
Adding a salty, crispy layer of chips gives it the perfect texture and little burst of dill and potato flavor that makes every bite taste even more like the ultimate lunchbox sandwich from childhood.

Make It Personal
One of the best things about this sandwich is that you can really customize the cheeses to your own taste. I used a combination of thin sliced Muenster cheese and creamy Land O Lakes yellow American.
I love the balance of the mild buttery Muenster with the super nostalgic creamy American cheese. Sharp cheddar, Colby Jack, provolone, havarti, Swiss, or even pepper jack would all be delicious on this sandwich.
I do think getting the cheese sliced fresh from the deli makes a huge difference. The texture is softer and creamier than packaged slices, which really adds to that classic lunchbox sandwich feel.

Why The Spread Works
The celery salt spread is what really ties this whole sandwich together. It adds creaminess, tanginess, and that nostalgic deli style flavor.
All that soaks into the soft bread in the best possible way. Without it, this would just be a basic cheese sandwich.
The spread gives every bite that rich savory flavor that makes the sandwich feel comforting, balanced, and almost impossible to stop eating.
The celery salt sandwich spread should not be super thick like a cheese ball or dip. You want it to have a softer, creamier consistency that spreads easily across the bread.
This should be more like mayonnaise texture. That texture helps create the classic soft deli sandwich bite that almost melts together with the cheese and bread.
If You Watch Your Salt
I would recommend adding the celery salt a little at a time and tasting as you go. There is already quite a bit of salt coming from the Muenster cheese, deli American cheese, and the dill potato chips.
You want the celery salt to lightly flavor the spread and give it that nostalgic deli flavor without overpowering the sandwich or making it too salty.
Make It A Party!
These sandwiches would also be absolutely adorable served at a party or luncheon. Just cut into small squares or triangles with a cute little toothpick stuck in each one.
They remind me of the kind of vintage party sandwiches you would see at old parties. Think baby showers, card parties, holiday lunches, or ladies luncheons, especially when served ice cold on a platter with pickles, potato chips, and maybe a little pasta salad on the side.

Lunchbox Cheese Sandwich Recipe
This Lunchbox Cheese Sandwich is the perfect combination of creamy, crunchy, salty, and fresh on thick soft brioche bread. Made with a fluffy celery salt cream cheese spread, deli sliced cheeses, crisp iceberg lettuce, juicy tomatoes, and crunchy dill potato chips, this nostalgic sandwich tastes like an old fashioned deli lunch in the very best way.
Ingredients
- 1 loaf soft brioche bread, sliced thick
- 4 ounces cream cheese, softened
- 2 tablespoons mayonnaise
- 1 teaspoon celery salt *or to taste
- 1/2 teaspoon onion powder
- Black pepper to taste
- 1 teaspoon yellow mustard or Dijon mustard
- 1 tablespoon very finely minced celery
- 1 tablespoon finely minced green onion or chives
- 1 teaspoon pickle juice or lemon juice
- Muenster cheese, sliced from the deli *quantity based on how many sandwiches you want to make
- Land O Lakes yellow American cheese, sliced from the deli
- Very finely shredded iceberg lettuce
- Tomato slices
- Salt and pepper for the tomatoes
- Dill potato chips
Instructions
- Add the softened cream cheese, mayonnaise, celery salt, onion powder, black pepper, mustard, minced celery, green onion, and pickle juice to a bowl. Mix very well until smooth and fluffy.
- Lightly toast the brioche bread if desired. I personally like this sandwich on soft bread without toasting, but either works.
- Spread a generous amount of the celery salt spread onto both sides of the bread.
- Layer the muenster cheese onto the bottom piece of bread. Add the shredded lettuce. Add slices of tomato and season the tomatoes with salt and pepper.
- Layer on the sliced Land O Lakes yellow American cheese.
- Add a single layer of crunchy dill potato chips right before closing the sandwich so they stay crisp.
- Top with the second slice of bread, slice in half, and serve immediately.
- This sandwich is especially good served ice cold with extra potato chips and a pickle spear on the side and a crispy Diet Coke.
