Every family has Heirloom Recipes, recipes that are passed down from one generation to the next. In my family we have many of these handed down dishes and one of our most prized is this meatloaf recipe. I have asked permission for years to share it and was always told a firm NO. Recently there was a change of heart and I have been given permission to share. The recipe is simple in its ingredients, but don’t let that fool you. This meatloaf is full of flavor. The recipe originator would only add one thing to it for a special treat and that was a hard boiled egg to the center before baking. This made every slice special with a think slice of delicious hard boiled egg inside. Below is the recipe, I am certain it will become an heirloom recipe for your family as well.
Ingredients
- 2 lbs of Ground Beef (other Ground Meat can be subbed)
- 1 Sleeve of Saltine Crackers, crushed up fine
- 2 Eggs, room temp
- 1 Medium Yellow Onion Minced
- 1 Medium Green Pepper Minced
- A couple of hearty shakes of Garlic Powder
- (optional 2 to 3 peeled, hard boiled eggs)
Mix all the ingredients in a large bowl, form into two loaves. If you choose to add the eggs, form the loaves around the whole, peeled hard boiled eggs. One loaf can be frozen to be baked at a later date. Bake loaf at 350 for about one hour. Helen NEVER put any kind of topping on her loaf and I believe it tastes better plain.
