Bacon Cheeseburger Stuffed Mushrooms

These Stuffed Mushrooms are a perfect appetizer that will make all your party guests happy. Made with crisp bacon, juicy ground beef, creamy Swiss cheese and a box of savory herbed stove top stuffing, these bacon Cheeseburger Stuffed Mushrooms are not only delicious but super easy to make. This recipe makes about 24 medium sized stuffed mushrooms. I freeze half the filling to stuff mushrooms with later and I also use this filling to make stuffed chicken or pork chops.

Choose Your Cheese

I use Swiss cheese when I make this recipe but you can really use any cheese that you prefer. Cheddar is another great cheese for this Bacon Cheeseburger Stuffed Mushroom recipe. I like to make my mushrooms to where they are crispy on top, but another option is to bake a little bit of cheese on top after you stuff the mushrooms.

Bacon Makes It Better

I like to dice my bacon for this recipe very small. This was it gets super crispy. You also want to make it small so that you get the perfect bite every time you pop a stuffed mushroom into your mouth. I used just a few slices of bacon for my recipe, but you can use more or less if you prefer. You can also put a bacon crumble on the top of these mushrooms for some extra texture and salty flavor.

Make It Today, Save It For Later

I usually am only cooking for two, but I still make this full recipe and save the filling and freeze it to stuff more mushrooms later. I also have used this filling to stuff pork chops or chicken. You can also top chicken breasts or chops with this filling and bake it off in an oven with some creamy soup on top, for yet another great one pan meal. Bacon Cheeseburger Stuffed Mushrooms

These stuffed mushrooms are made with crispy bacon, creamy Swiss and juicy ground beef. Stuffed in a mushroom and baked to perfection they make the perfect appetizer. You can also use the filling to make stuffed chicken or pork chops with.

Ingredients

  • 1/2 lb of ground beef
  • 1 box of Stove Top Savory Herb Stuffing
  • 1 medium to large sweet onion grated on a box grater or very finely diced
  • 2 cups grated Swiss cheese
  • 6 slices of bacon, diced
  • 2 tablespoons of soy sauce
  • 1/4 cup sweet relish
  • 12 to 15 large mushroom caps
  • 3 eggs
  • 1 tablespoon of dried parsley
  • 2 teaspoons of chili powder
  • black pepper
  • Spray Oil or Melted Butter

Instructions

  1. Combine your onion and stove top stuffing mix.
  2. In a skillet add your diced bacon, cook until crispy and let drain on a paper towel.
  3. Carefully wipe out most of the bacon grease from the skillet using paper towel, add the ground beef, cook fully and break up into a fine crumble. Drain if needed, season with a tablespoon of soy sauce, add the relish, stir to combine, let cool.
  4. Add the bacon and the beef mix to the stove top mixture.
  5. Whisk the eggs with the remaining soy sauce and the seasonings,
  6. Add the swiss cheese to the meat, stuffing mix, stir well to combine, then add the eggs, stir until all the stuffing mix looks saturated.
  7. Add a tablespoon or two, depending on size of mushroom cap, to the mushrooms. Mound the mixture generously. Add to a sprayed baking sheet that you covered in foil, then spritz all the stuffed mushrooms with the oil of your choice or brush with some melted butter.
  8. Bake at 375 degrees for about 20 o 30 minutes, until they look crispy. Serve immediately.


*you can save the mixture and freeze and add to mushrooms later to bake off. You can also use this mixture to top chicken or pork and bake.
