An Easy Filling Weeknight Delight

Baked Rice

This Baked Rice dish is a delightful set it and forget it recipe. It requires very few ingredients and all you have to do is combine them, give it all a stir, and pop this in your oven for one hour.

This method results in a savory tender rice with just enough slightly crispy edges reminiscent of paella that makes it texturally delicious. I serve this with grilled sausage or chicken tenders for a very easy dinner.

Butter Is Better

This recipe calls for a whole stick of butter. The butter is what makes this rice creamy, soft, delicious, and have delightful crispy bits on the edges and bottom.

If this amount of butter is triggering to you, feel free to use less. This recipe will be delicious but I suggest you try it some time with the whole amount of butter.

It can be an indulgent treat.

There is no need to come back to Facebook and leave me an enraged comment about the butter! I know it’s a lot of butter!

Just use less if you want, this isn’t a health food dish, OK?

Washing Rice & The Soup

If you have never been taught to rinse your rice, now you know. There is often arsenic on rice that comes from the ground.

Washing the rice removes it but also allows the rice to cook up as it should. If you have struggled with cooking rice and have never rinsed it, you will now see that your rice comes out much better.

Pictured above are the two cans of soup that I like to use for this recipe. Any cans of soup that are broth-like will do.

Just remember not to use a soup with noodles.

The Chicken Gumbo pictured here does have a small amount of cooked rice in it and that is ok. I like this flavor combination but feel free to use what you like.

Just do not use a cream soup!

Paella Like

This picture shows how the rice comes out of the oven before fluffing it. As you can see, the rice has caramelized a bit on the edges and slightly on the bottom.

I love the texture and flavor this adds. You will really enjoy this, especially with the combination of the fluffy soft rice and then these crispy bits.

Serve It With Sausage

I like to serve this rice with a simple grilled sausage that I grill up right in my skillet then slice. This is such a nice and easy meal for a weeknight dinner.

Any sausage of your choice will do. You can see the rice is nice and fluffy.

You can also cook up some ground beef, season it, and serve it with this rice as a delicious and affordable meal.

Your guests will really love this dish. It’s almost like a variation on jambalaya.

Baked Rice

This Baked Rice dish is a delightful set it and forget it recipe. It requires very few ingredients and all you have to do is combine them, give it all a stir and pop this in your oven for one hour. This method results in a savory tender rice with just enough slightly crispy edges reminiscent of paella rice that make it texturally delicious. I serve this with grilled sausage or chicken tenders for a very easy dinner.

Ingredients

  • 1 cup of white rice, rinsed thoroughly and drained (long grain rice, do not use minute rice)
  • 1 10.5 ounce can of Campbells Chicken Gumbo Soup (pictured in post)
  • 1 10.5 ounce can of Beefy Mushroom Soup (pictured in post)
  • *any two cans of "brothy" type soup will do that doesn't have noodles, just don't use a cream soup, you can use a consomme, french onion or broth as well. I like the gumbo for the onions and peppers
  • 1 stick of butter, cut into slices (if this is too much for you, then use less, but this is what allows the rice to get a nice buttery crisp on the bottom and sides)
  • 1/4 cup of water

Instructions

  1. You will need to use an 8 x 8 baking dish for this recipe.
  2. Rinse your rice well in a mesh strainer if you have one and let it drain, add the rice to the baking dish.
  3. Heat your oven to 425 degrees.
  4. Add the two cans of soup and the water, I add the water to the cans of soup to get the stuff on the bottom of the can out. *To clarify, I add a little of the 1/4 cup of the water to each can and slosh it around to get up the rest.
  5. Give this all a good stir, then add the butter slices on top.
  6. Cover tightly with foil and bake 30 minutes, the uncover and bake another 30 minutes.
  7. Remove from oven and fluff up, then I like to add some black pepper and dried parsley for color.
  8. I grill sausages and serve with the rice, sliced up.
  9. This recipe can be doubled, if you double it, only increase the butter by 1 1/2 sticks and then use a 9 x 13 pan.
