Italian Sausage and Chili Garlic Spaghetti is an easy weeknight meal that anyone can make. It consists of simple ingredients that make a flavor packed dish.

The beauty of this spaghetti dinner is that it also makes for great leftovers. You can use regular or spicy Italian Sausage or treat yourself to specialty sausages that add an even more flavor packed punch.

This recipe will be in your regular rotation after making it once.

I love making this recipe when I have no idea what to do for dinner. If you are cooking for a family, you can omit the spicy chili and serve that on the side for adults to add so that this meal will be kid friendly as well.

Special Sausages

This dish will be super delicious with whatever Italian Sausages you buy, but it becomes extra special if you get yourself some specialty sausages from your grocery store or a local butcher. I like to get these mozzarella and pepper sausages that take this recipe to the next level.

Cheese If You Please

While I am a huge fan of the dreaded “powdered Parmesan,” I definitely recommend using the really good quality Parmesan in this recipe. I mean the one you grate up yourself.

I even buy the $2.99 one from Aldi and it always comes out great. Save the powdered Parmesan to make my famous Best Ever Meatballs!

Chili Arbol

You will see in the recipe card that I use these Chili Arbol pictured above. I keep these on hand to make my copycat California Pizza Kitchen copycat Kung Pao Spaghetti.

These chilis have some kick, so use sparingly. If you do not want to mess with these, just use regular old dried chili flakes.

The first time you make this, I would advise going light on the chili, tasting, and adding as you go. It can get very spicy, especially with the sausage.

A Dinner Everyone Will Ask For

This Italian Sausage and Chili Garlic Spaghetti will be a dinner everyone asks you to make over and over. A great side dish or appetizer to make along this pasta would be my Bruschetta Recipe. I also love to make my roasted peppers to serve along side this.

The peppers are a nice added touch of green.

Italian Sausage and Chili Garlic Spaghetti

Italian Sausage and Chili Garlic Spaghetti is an easy weeknight meal that anyone can make. Simple ingredients that make a flavor packed dish. The beauty of this spaghetti dinner is that it also makes for great leftovers. You can use regular or spicy Italian Sausage or treat yourself to specialty sausages that add an even more flavor packed punch. This recipe will be in your regular rotation after making it once.

Ingredients

  • 1 pound box of spaghetti
  • 4 to 6 Italian Sausage Links *I get a special mozzarella and pepper stuffed sausage from my local butcher
  • 1/4 cup olive oil
  • 4 to 6 garlic cloves, sliced thin
  • 4 to 6 dried chili peppers (I use chili arbol *pictured in post) or you can use a teaspoon (or more) of dried chili flakes
  • 1 cup of diced red bell peppers
  • 2 tablespoons of dried oregano *adjust to your preference
  • 2 cups of shredded Parmesan
  • Reserve 2 cups of the pasta water from cooking the spaghetti

Instructions

  1. Boil one pound of spaghetti
  2. In a skillet add some olive oil and sear off and cook four Italian sausage links, these were stuffed with mozzarella and peppers from a local grocery, you can use any kind you prefer.
  3. When the sausage is fully cooked, set aside, lower the heat in the pan and add 1/4 cup olive oil and the sliced garlic as you like. I sometimes use marinated garlic I got from my stores olive bar.
  4. Chop up some dried chili peppers, I used chili Arbol or add dried red pepper flakes. Add this to the garlic and olive oil. Let it slowly warm in the olive oil
  5. Add in the oregano and also allow it to warm in the olive oil
  6. When the pasta is cooked, use some tongs and add it right from the pot of water to your olive oil mixture in the skillet, increase the heat and stir fry that spaghetti around, coating it with all the garlic, herbs and peppers
  7. Add in a cup or two of really good grated Parmesan, toss around until it’s all melty, add the reserved pasta water 1/4 cup at a time and let simmer in the sauce until the sauce is the creamy texture you want.
  8. Serve in a bowl, top with the sausages, serve with crusty bread and butter and an arugula salad. You can also slice the sausages and serve on top of the pasta.
