Dressed To Impress, But Won’t Blow Your Food Budget

Spring Spaghetti

Spring Spaghetti is a perfect pasta for this transitional time of year. Made with crispy bacon, sweet corn, a little bit of Parmesan cheese and some spring greens, this pasta cooks up quickly and tastes great reheated.

I made this recipe when my weekly food budget was at an all time low and it immediately became one of my most favorite meals. Sometimes I substitute the bacon for a ham or sausage.

I have even added a tiny bit of ready made Alfredo sauce to this dish to make it extra creamy. This is one recipe Mister Tipsy requests time and time again.

Simple Ingredients

This recipe uses just a few ingredients. If you do not like the heat of the Fresno pepper that is in the ingredients on the recipe card, you can substitute with a sweet red bell pepper or other less spicy pepper.

I use chives, but you can also use green onions. Sometimes I even use both.

Are Fresno Peppers Spicy?

Fresno peppers can have some heat to them. The recipe card calls for you to remove the seeds from the pepper.

Use caution when doing this step. The heat from the peppers can remain on your hands for some time after you take the seeds out and can burn your eyes and other parts of your body.

This can happen even after you wash your hands. I sometimes buy a jar of Fresno Chili Peppers to avoid this step.

I love the heat but I sometimes hate this step.

Save Your Pasta Water

In this recipe, it calls for you to save your pasta water. This is to help melt the Parmesan cheese into your pasta.

This helps create a thicker sauce. Just ladle out the pasta water towards the end of the pasta boiling and set it aside in a bowl.

Bursting With Flavor

While there are very few ingredients in this recipe, they all compliment one another and make a delicious sauce. The tang of the peppers, the sweetness of the corn, and the salty deliciousness of the bacon and Parmesan cheese are all the perfect compliment to one another.

I have always used spaghetti for this recipe, but I am sure any other pasta would work.

Spring Spaghetti Recipe

Spring Spaghetti

Corn and Bacon Spaghetti, an easy meal that looks expensive but won't break the bank. Crispy bacon, sweet corn, a little bit of spice, and some leafy greens all tossed with spaghetti. This pasta is easy to make, pretty to look at, and delicious.

Ingredients

  • 8 ounces of Spaghetti
  • 6 or 8 slices of Bacon cut into one inch pieces
  • 1 Chili Pepper, seeds out, sliced thin. I used a Fresno but any will do
  • 3 Green Onions sliced thin
  • 3/4 cup finely grated (powdered) Parmesan cheese
  • 2 tablespoons of Butter
  • 1 to 2 cups of Leafy Greens, I used spinach and arugula
  • 1 can of Corn, drained
  • Sliced Chives and Dried Chili Flake (optional)

Instructions

  1. Boil your spaghetti in salted water and save one cup of the pasta water.
  2. Brown the bacon in a skillet and then let the bacon drain on paper towels, leave the bacon grease in the pan. You can wipe out or drain a little of it if you think it will be too greasy for you.
  3. Add your corn, peppers, and green onions to the skillet and sauté for a few min in the bacon grease.
  4. Add your spaghetti to the corn, sauté, and sprinkle the powdered Parmesan all over it a little at a time, tossing to coat.
  5. Add the pasta water and the butter, simmer for a bit and toss.
  6. Then toss in all the greens and toss until wilted.
  7. Serve topped with chili flake and chives, you can also add more Parmesan.
