Beefy Chili Stew
A Hearty Twist On A Classic Recipe

Beefy Chili Stew is a classic comfort food with the hearty addition of diced potatoes. This chili stew has some warm spice topped with cheddar cheese, onions, and sour cream for a delicious dinner.
When I was around ten years old I started a babysitting business. At the age of ten I was a little too young to babysit long hours or late night but I was old enough to be a Mother’s Helper.
I kept kids entertained while mom did stuff around the house. I also helped out with some easy household chores and starting dinner was one of those tasks.
I worked for a family who made a Beefy Chili Stew like this with potatoes. The Mom left all the ingredients for me and I put together the dinner and got it going in her slow cooker.
This was a really easy dinner for even a ten year-old to make. I am embarrassed to tell you that I ended up eating like half the pot of chili before it was even done cooking!
I had never had chili with diced potatoes before and I thought it was so genius.
Now my Mom’s Chili will always be my favorite recipe, but this Beefy Chili Stew is a fun twist! It is just a little heartier since it’s bulked up with the diced potatoes.

Canned Potatoes
Some people do not know the glory of using canned potatoes, but I love using them in soups and stews. The reason for this is that they do not fall apart when cooking in something that cooks low and slow.
I also use canned potatoes in my Au Gratin Potato recipe and my Classic Beef Stew.
The canned potatoes also absorb some of the heat from the spice in the chili. It leaves the nice heat without the burning sensation of spice that a lot of people do not like.

Goya Sazon
I love using these Sazon packets by Goya brand since it adds great color and flavor. I use these in many of my recipes.
You can search Sazon on my site and all the recipes pop up for you to scroll through. This does not add heat, just a nice spice.
You can find this at mostly any grocery store or online. Amazon even sells it.

Chili Seasoning
I have used these McCormick packets for years. I love the spice blend and they are great for people who do not keep a ton of spices in their pantries.
It just has nice flavor and helps thicken the “sauce” in this chili stew. I have not been to a grocery store that does not sell these.


Beefy Chili Stew Recipe

Beefy Chili Stew is a fall comfort food with ground beef, tomatoes, diced potatoes, and a delicious blend of seasonings. All of this is simmered up into a delicious bowl of goodness.
Ingredients
- 3 lbs. of Ground Beef
- 1 large Sweet Onion
- 2 packets of Sazon Seasoning *pictured in post before the recipe card
- 2 packets of McCormick Original Chili Seasoning Mix *pictured in post before the recipe card
- 2 cans of Diced Tomatoes with Green Chilis (14.5 ounces each)
- 2 cans of Diced Potatoes (15 ounces each)
- 1 can of Diced Green Chilis (4 ounces)
- 3 cups of Water
- 1/4 cup of Ketchup
- 1 tablespoon of Onion Powder
- 1 tablespoon of Garlic Powder
- 2 teaspoons of Black Pepper
- 1 teaspoons of Salt
- 2 tablespoons of Cooking Oil or Butter
Instructions
- Dice the onion into a small dice. Add the cooking oil or butter to a deep pot, add the onions, and sauté until soft and slightly golden brown.
- Add the ground beef and cook with the onions, crumbling it up as you go. I like to break it up into a fine crumble. I use the 85/15 mix of beef so I do not feel the need to drain it. If you want to drain, this is the point to do it.
- Add the dry seasonings including the packets of Sazon and the chili seasoning packets. Sauté for 10 minutes.
- Add the diced tomatoes, green chilis, ketchup, and water. Bring to a simmer and simmer for 15 minutes. Drain and add the canned potatoes and the water, bring to a boil again, reduce heat to a low simmer and simmer one hour. Stir this occasionally, but do not cover. If you like you can also put this all in a slow cooker at this point and cook low and slow 6 hours.
- Turn off the heat and let the stew sit for 15 minutes before serving.
- Top with cheese, onions, and sour cream.
