Bacon and Fried Chive Rice
Comfort Food For Fans of Salty and Sweet Flavors

Bacon and Fried Chive Rice is an unconventional comfort food featuring crisp bacon, sautéed chives, soy sauce, and black pepper spooned over fluffy white rice with a drizzle of honey. The whole dish can be topped with some chili onion crunch to take it to the next level.
I learned to make a variation of this dish when I worked for a Taiwanese family on the North Shore of the Chicagoland area. They used Chinese chives to make this, though I am not totally sure what the difference between Chinese and typical chives are.
My best guess would be that the Chinese chives are slightly more garlicky but either way, this dish is delicious. I added the honey and black pepper variation to my dish, but the outcome is still the same: delicious.
This dish for me is the perfect combination of salty, sweet, and crunch.
I am a huge fan of “the crunch.” Freeze dried candy is my hyper fixation treat and the chili onion crunch is the umami variation of this fixation!
Girl Dinner
If you spend too much time on social media like I do, you may be familiar with the concept of “girl dinner.” I do not have a proper definition of girl dinner for you, but a simple explanation is a meal that you throw together for yourself that may be a mish-mosh of ingredients.
This Bacon and Fried Chive Rice definitely meets these made up standards. I know you will love this girl dinner as much as I do.

Chili Onion Crisp
The only ingredient that may be new to you in this recipe is the Chili Onion Crisp. Many may be familiar with it from seeing it at Trader Joe’s, but I see it at many stores now.
I posted the picture above of the one I currently have on hand. If you are not familiar with this ingredient, I suggest getting familiar because it is great.
I like the spicy variety but they also have a non spicy variety as well. You can also search for this on Amazon and I am sure you will find many options.

Bacon and Fried Chive Rice Recipe

Bacon and Fried Chive Rice is the perfect dish for lovers of salty and sweet. Crisp bacon, garlicky chives, and soy sauce flavor paired with a honey drizzle and cracked black pepper. All of this is served over fluffy white rice. Total comfort food.
Ingredients
- 1/2 lb. of Thick Cut Bacon
- 10 to 15 Chives
- 2 tablespoons of Soy Sauce
- 1 cup of Uncooked Rice
- 1 tablespoon of Honey
- Cracked Black Pepper (to taste)
- 1 to 2 tablespoons of Chili Onion Crunch *pictured in post
Instructions
- Cut the bacon into small 1/2 inch bite sized pieces. Heat a skillet until hot but not smoking. Add the bacon and cook until crispy. Remember to remove the bacon just before it is totally brown because it will continue to darken for about a minute after you remove from pan. Remove the bacon from the pan and drain on paper towels.
- Cook the rice according to the package directions or use whatever method of cooking rice you prefer. I use the Instant Pot and cook the rice for 12 minutes at a 1:1 ratio (1 cup of water per 1 cup of rice)
- Carefully drain the excess bacon grease from the skillet but reserve about 1 to 2 tablespoons of bacon grease in the pan to fry the chives.
- Slice the chives in 1/2 inch long pieces. You can use as many or as few chives as you like. I do about 15 to 20 chives.
- Heat the bacon grease left in the pan and add the chives. Sauté for 2 to 3 minutes. Add 1 to 2 tablespoons of soy sauce and add the cooked bacon back to the pan. Sauté for a minute or two then turn off the heat. I do a little cracked black pepper on top.
- When the rice is finished cooking, add some to a bowl, drizzle honey over the top of the rice, and add as much black pepper as you like to the top of the rice and honey.
- Top the rice with the fried bacon and chives.
- Top the whole dish with as much of the chili onion crunch as you like. You can also add a little more soy sauce if you wish.
- Eat immediately.
