Cleaning Up My Act ~ Take Out Menu Twist

I am getting to the age where I love staying in as much, if not more, than going out.  One of our favorite Date Nights is to order in take out, curl up on the couch, and watch our favorite TV shows.  This USED to be a money saver as well.  I don’t know about you, but the last time I had Asian Take Out delivered to my door, the bill was over $40! Not to mention that it really wasn’t that tasty, it was loaded with tons of ingredients we didn’t need, like MSG, Salt, and Oils. Plus there is always that over abundance of white rice that’s starchy, and dry, and ends up going in the garbage.

I decided with the New Year upon us, and us trying to make small but impactful changes to our diet, I was going to revamp the Asian Take Out menu and make it my own. I recently partnered with a new Meat Meal Delivery Service called Karv Meals. I decided to create two Asian Take Out Inspired recipe using Karv Ribeye Steaks and Karv Ground Pork.  I loved the convenience of the monthly subscription having so many options for me to get creative with and that they were all pre-portioned so that I could easily choose my proteins without any waste.

The first recipe I came up with was a play on one my famous “Food Boards”.  I came up with a Skillet Steak recipe served with Snap Peas, Char Siu and Soy Dipping Sauces.  The other great thing about Karv Meats, is  because they have NO hormones, antibiotics, colorants or dyes, you really only need basic ingredients to make a great meal.  Check out my recipe below.

Asian Inspired Steak Board

Ingredients

  • 2 Ribeye Steaks, I used Karv Ribeyes
  • 4 T of Good Quality Butter
  • Salt & Pepper
  • 2 C of Snap Peas, Steamed
  • 1/4 C Char Siu BBQ Sauce ( I purchased mine from an Asian specialty store)
  • 1/4 C Good Quality Soy Sauce

Steps

  1. I only use a cast iron skillet for cooking steaks. I heat my skillet up until it is very hot and I add the butter.
  2. I allow the steaks to sit out on the counter for about 20 minutes before cooking.
  3. I add the steaks to the sizzling skillet and I let it cook from 3 to 6 minutes depending on the thickness of the steaks.
  4. I turn the steaks over only one time during cooking.
  5. Sprinkle the cooked side with salt and pepper.
  6. When the second side is done cooking, turn the steaks over again, sprinkle the other side with salt and pepper, and let the steaks rest loosely covered with a lid or foil for ten minutes.
  7. I then sliced the steaks and arranged them on a board with the snap peas, and both sauces.

Food boards are my favorite way to eat because you can graze. Feel free to change-up your sides with this dish.  You can add other steamed veggies, rice, or a good salad.  This option was a light and grain free way to satisfy our take out craving while staying true to our healthy New Year initiatives.

Karv Ribeye Asian Steak Board

 

If you have been following me for a while, you know that I love a good meatball.  My usual meatball recipe has carbs and eggs and I wanted to change it up a bit.  I decided to use Karv Ground Heritage Pork to come up with an Asian Inspired Meatball Salad Bowl. Check out what I came up with below.

Asian Inspired Pork Meatball Salad Bowl

Ingredients

  • 1lb Karv Ground Pork
  • 2 T Char Siu BBQ Sauce
  • 1 T Tamari Sauce
  • 2 T Fresh Ground Ginger (you can use powder)
  • 1 t of Chili Powder
  • 2 t of Onion Powder
  • 2 t of Garlic Powder
  • 1 T of Minced Cilantro
  • 3 to 4 C of Spinach Leaves
  • 1 Honey Crisp Apple Sliced Thin

Steps

  1. Combine ground pork, bbq sauce, tamari, ground ginger, chili powder, onion powder, garlic powder, and cilantro. Mix Well.
  2. Form meatballs, mine yielded about 12 meatballs.
  3. Let meatballs rest on a plate for about 20 to 30 minutes.
  4. Heat your cast iron skillet with whatever cooking oil you choose. I used olive.
  5. Brown meatballs on all sides.
  6. Place cast iron skillet in a pre-heated 350 degree oven for 20 minutes.
  7. In a bowl place the spinach.
  8. Add the meatballs straight from the oven, and they will wilt the spinach a little bit.
  9. Serve the sliced apples with the dish.

I did not feel that this dish needed any dressing. But you could add your favorite dressing or make your own vinaigrette.  This was another great meal that had all the components I love, crisp fresh veggies, sweet crunchy apples and savory meat flavor.  The ground pork really held up well without having to use any egg or breadcrumbs.

Both of these “twists on take out” satisfied our craving and the presentation made it feel special.  The fact that I was able to create these dishes using meats I had on hand thanks to my  Karv Monthly Meat Subscription made it more convenient and crazy affordable!

Making a special meal also doesn’t have to involve making a complicated dish.  All you need are good quality ingredients and a creative spirit.  I look forward to creating even more take out dishes at home. Now, back to the sofa!
