The Ultimate Breakfast Delicacy

Do you love Eggs Benedict like I do? Because I LOVE Eggs Benedict. To me, it is the perfect food. I made something similar to this Eggs Benedict Breakfast Pastry a few years back and it was a huge hit.

Recently I was reminded of it and then I saw a foodie youtube channel I love eating an Eggs Benedict croissant and the idea for these pastries was born.

This Eggs Benedict Breakfast Pastry is made with eggs, deli ham, a tube of croissants, and a packet of hollandaise sauce. Breakfast cannot get any easier or more indulgent.

Make Ahead and Save Time

The beauty of this recipe is that you can make a big batch and reheat them for breakfast on the go. They also make a great brunch recipe.

These baked up quickly, in under 20 minutes. You can also probably make them in an air fryer although I have not tried this method yet.

Eggs Benedict Breakfast Pastry

These Eggs Benedict Breakfast Pastries are so easy to make. Made with ready to bake crescent rolls, eggs, ham and a seasoning packet for hollandaise they bake up in no time and they are delicious. These can also be made ahead of time and reheated for a quick breakast on the go.

Ingredients

  • 1 tube of crescent rolls
  • 4 eggs (use the medium sized eggs to prevent spill over, but large will do if that's all you have and you're careful
  • 6 slices of deli ham off the bone or any variety you prefer
  • Salt
  • Pepper
  • Herbs of You Choice, I used Herbs De Provence, you can also use dill or any dried savory herbs you prefer
  • Cayenne Pepper
  • 1 Packet of McCormick Brand Hollandaise Sauce + the ingredients it lists on the packet to make it. My packet called for 1/2 stick of butter and water.

Instructions

  1. Unroll the the crescent rolls. They are typically in four sections and each section is two triangles together as a rectangle with a perforation at an angle. You want to add these four "rectangles" to a cookie sheet sprayed with non stick spray.
  2. Seal the perforation making a complete rectangle, seal this the best you can but a small hole or two will be ok. Roll the edges of each rectangle slightly, to make an edge all around the crescent rectangle so your egg can be cracked into each one.
  3. Crack and egg into each one carefully trying to keep the yolk intact unless you prefer the yolk broken. It is ok if a little of the egg white spills out, but try to keep the eggs inside the crescent rectangle.
  4. Finely dice up your deli ham. Add the ham to each rectangle.
  5. Season with salt, pepper, dried herbs of your choice and a pinch of cayenne for color and spice.
  6. Use a pastry brush and brush the edges of the crescent rolls with some of the egg whites that are in each pastry triangle. Or use the excess that spilled over to brush them.
  7. Bake in the center of the oven at 350 degrees for about 20 minutes. Remember that every oven bakes differently so check on them at the 12 and 15 minute mark. They will be golden brown when done on the edges and the egg whites will be solid white.
  8. Make the hollandaise sauce according to the package directions. Drizzle on each pastry before serving and or serve the sauce as a dipping sauce. Top with some black pepper.

Crescent Rolls

Crescent rolls are already cut and separated into the rectangles that you need for this recipe. You simply have to seal up, as best you can, the perforation down the center. Then you roll the edges slightly all around each rectangle so you have a place for your egg to sit.

How Big Are Your Eggs?

I only had large eggs, so I used those. Medium sized eggs are best as if you use large, you may have some of the white spill out.

This is totally ok, just do the best you can. As you will see in the steps you can use the spilled over egg whites to brush the pastry to add some golden brown color.

The Sauce

I used this McCormick Hollandaise sauce for convenience. I love the texture and flavor of the sauce.

This packet also only requites butter and water to make it. Others may also also require milk.

This sauce yields a smooth and silky texture that is easily reheated.

Deli Ham

Use a deli ham sliced thin. I prefer the deli ham off the bone.

I cut this up very small and sprinkle it to bake in the pastry. It comes out salty and delicious.

Oven Time

Every oven is different, so make sure you keep a close eye on these. Mine were done at the 17 minute mark but another oven may need up to 20 minutes.
