Underwood Deviled Ham

Underwood Deviled Ham is an old school canned good. Deviled ham is ground ham mixed with spicy seasonings, such as chili peppers, cayenne peppers, or mustard. The William Underwood Company, founded in Boston in 1822, found success providing canned foods to the U.S. Army during the Civil War and to settlers who needed long-lasting food products for their trip west. Many people grew up eating this. Deviled Ham is great in this in these ham balls cause it adds such great flavor and texture. I find this at Family Dollar and most major grocery store chains. I think you will find this ingredient to be very delicious in this recipe.

Beef Consommé

This Beef Consommé adds great flavor to the sauce that you make to pour over these ham balls. I find this canned soup easily at most grocery stores. you can also substitute a beef broth or other beef based soup for this ingredient. I have also used french onion soup for this recipe when I have not been able to find the consommé.

The meat mixture will be slightly wet when you mix this. Not to fear, this will add great texture.

Ham Balls

Ham Balls are a Midwestern Classic Appetizer. This recipe is made with Deviled Ham and Ground Beef. The sauce is made with ketchup, brown sugar, Worcestershire and a can of Campbells Beef Consommé. This bakes up sweet and savory and is a great appetizer with amazing texture and flavor.

Ingredients

  • *Pictures of all ingredients in the post above this recipe card
  • 1 lb of lean ground beef
  • 2 cans of Underwood Deviled Ham (4.25 ounces each)
  • 1 sleeve of saltine crackers (soda crackers, about 1 cup crushed)
  • 1/4 cup of milk
  • 1 small yellow onion, grated
  • 1 Egg
  • 1 tablespoons of dried parsley
  • 1/4 teaspoon of dry mustard
  • 1/2 tablespoon of onion powder
  • black pepper to taste
  • 1.5 cups of ketchup
  • 1 tablespoon of dijon mustard
  • 1 10.5 ounce can of Campbell's Beef Consommé (or beef broth equivalent)
  • 1 tablespoon of Worcestershire Sauce
  • 1.5 tablespoons of brown sugar

Instructions

  1. Add your beef and cans of deviled ham to a bowl. Crush your saltine crackers into a fine crumb and add to the bowl.
  2. Add the milk, eggs, grate your onion on a cheese grater and add that, then add the pepper, onion powder, parsley, dry mustard, combine well but do not over mix. The meat mixture will be slightly wet.
  3. Form the meat mixture into 2 inch balls and add to a casserole dish. heat your oven to 375 degrees and add your meatballs and let cook for 10 minutes or until they are slightly but not fully cooked.
  4. While the meatball par bake, add your ketchup, Worcestershire, brown sugar, mustard, and beef consommé to a skillet or sauce pan. Bring to a boil, reduce heat and simmer 20 minutes until thickened. Make sure to whisk often so it doesn't burn. When it is thickened to a glaze texture, remove from heat.
  5. After the meatballs bake for about 10 minutes and are slightly browned, carefully remove from oven and pour the sauce over the hamballs. Bake at 375, uncovered for 35 minutes.
  6. Remove from oven, let rest for ten minutes and serve with toothpicks.
  7. You can make this ahead of time and reheat. You can also freeze the ham balls unbaked and thaw and make the sauce and bake.
