
Asian Grilled Chicken Sandwich

I have been resurrecting a lot of classic recipes that I find in my Grandma’s cookbooks and giving them a modern day makeover. I came up with this recipe for an Asian Grilled Chicken Sandwich using a classic kitchen hack where you marinate your chicken breasts in Zesty Italian Salad Dressing. This Asian Grilled Chicken Sandwich reminds me of a play on a Vietnamese Bahn Mi Sandwich. A Bahn Mi Sandwich is a typical Vietnamese Sandwich on a French Baguette and stuffed with marinated meats, cucumbers, herbs and pickled veggies. Last Sunday we were having Mister Tipsy’s Dad over for dinner and serving him any unfamiliar food would not end well, so I decided that this Asian Grilled Chicken Sandwich would be something a little different for us but familiar to his Dad.
Bahn Mi
Bánh mì or banhmi is the Vietnamese word for bread. In Vietnamese cuisine, also known as Saigon bread it also refers to a type of baguette which is often split lengthwise and filled with various savory ingredients as a sandwich and served as a meal. I got everything I needed for this sandwich from Aldi, it made 6 sandwiches and cost about $15 to make. You do not have to get the ingredients at Aldi, they are available in all stores. Here is what you will need to make this Asian Grilled Chicken Sandwich:
Ingredients
- 1 Package of 6 Ciabatta Rolls
- I bought the take and bake rolls but you could also use French rolls. You want something crusty.
- 6 thinly sliced Chicken Breasts
- 1 Bottle of Zesty Italian Dressing
- 1 Bag Salad Kit, Asian Variety
- Mayo
If I wasn’t feeding an old grumpy man I would have also added:
- Sliced Cucubers
- Cilantro
- Some kind of pickled veggies
- Sliced green onions
- Water Chestnuts
You can definitely load these sandwiches up with all kinds of veggies, but just using the salad kit works really well too. You will definitely have a complete meal using only the ingredients that I listed above.
Tipsy Tip
You will want to marinate these chicken breasts the night before for optimal flavor. I reserve a little of the salad dressing BEFORE marinating the chicken to brush on the chicken as I cook it. Do not use the dressing from the raw chicken to do this. If you forget to marinate your chicken you can simply use the salad dressing to baste the chicken while you cook. The chicken will not have the same intensity of flavor but it will still be good.

The rest of the steps are easy for the Asian Grilled Chicken Sandwiches:
Steps
- Marinate your chicken overnight.
- Assemble your bag salad kit.
- If using take and bake ciabatta rolls, bake according to package directions.
- Grill your chicken until an internal temp of 165 degrees is reached.
- Spread mayo on both sides of your rolls.
- Top with chicken and the salad mix.
You can serve this sandwich as a complete meal, it is a hearty sandwich. This is also a great sandwich to make ahead for picnics and parties. You can prepare all the components, keep it all cold and assemble the sandwiches when ready to eat. This sandwich does not have to be served warm. Some sides that go really well with this sandwich are:

- Three Bean Salad
- Macaroni Salad

If meal prep is your thing, these marinated chicken breasts are also great to make ahead for the week to use in other sandwiches and salads. They are even great eaten on their own as a main course. Make this recipe kid friendly by serving them as a mini version on slider buns!
