One Skillet Creamy Cheddar Chicken and Broccoli

This one skillet creamy cheddar chicken and broccoli is a weekday meal that dreams are made of. Made with chicken, fresh broccoli and a broccoli cheddar soup mix, this dinner cooks up in no time at all. Served over rice or noodles, this meal is comforting, affordable and delicious.

The recipe is simple, I will just add a few pictures and a paragraph or two for anyone who needs any clarifying.

The Soup Mix

This is the soup mix I use and I get this from Aldi. They have a lot of varieties of soups and chili that I like to keep on hand for busy weeknight meals or for when we are feeling under the weather. There are other brands at other stores that are similar. I know that Bear Creek makes one as well. Just make sure that all you have to add to the one you buy is water. I use half this package and save the rest for another time.

Season Your Heart Out

I love, love, love the seasonings in this recipe. The addition of celery seed, celery salt and tarragon gives this an all day home cooked flavor. The tarragon can be a strong flavor for those who are new to it. Add a little at a time so you know how much you like. Be sure to give it some time to “bloom” in the heat of the pan so you have an accurate idea of how strong it will be. I also love to keep celery seed and celery salt on hand for recipes. Both add so much unique flavor to these wuick and easy recipes.

You can use as much or as little broccoli as you prefer. You can even use a bag of frozen.
A creamy and delicious gravy that goes over rice.

One Skillet Creamy Cheddar Chicken and Broccoli

This one skillet creamy cheddar chicken and broccoli is a weekday meal that dreams are made of. Made with chicken, fresh broccoli and a broccoli cheddar soup mix, this dinner cooks up in no time at all. Served over rice or noodles, this meal is comforting, affordable and delicious.

Ingredients

  • 1.5 lbs of chicken cut into small bite sized cubes. I use tenders and cut the creepy tag thing off and then cut into small pieces
  • 1 package of Broccoli Cheddar Soup Mix *I use half the package approximately 6 ounces of the 11.2 ounce package (pictured in post) any similar mix will do. Save the other half to make this again
  • 4 cups of hot water
  • 1 cup shredded sharp cheddar cheese (optional)
  • 1 smaller bunch of fresh broccoli, chopped, approximately 3 cups, can use more or less or frozen if you prefer, just thaw and drain.
  • 1/4 teaspoon dried tarragon
  • 1/4 teaspoon of celery seed
  • 1/4 teaspoon of celery salt
  • 1/4 teaspoon of paprika
  • black pepper to taste
  • *spice amounts can be adjust per your preference
  • 3 tablespoons of butter

Instructions

  1. Pat your chicken clean/dry with a paper towel, cut into small bite sized pieces.
  2. Add butter to a deep sided skillet and then add the chicken. Sauté the chicken until fully cooked. Then add the seasonings. This is so you can taste and adjust. Note that there is salt and seasoning in the soup mix you will add so keep that in mind when seasoning. When you have the chicken seasoned and sautéed for about 5 minutes, carefully remove from the pan.
  3. Make sure there is butter and chicken juice in the pan still, if not add some more butter and then add your washed and chopped broccoli. Sauté for about 10 minutes. I like my broccoli with some bite to it still, you can cook longer if you like it really soft.
  4. When the broccoli is cooked, add the chicken back to the pan. Make sure you get those chicken juices in there too.
  5. In a large bowl add half the package of the soup mix to the bowl. It will be about 6 ounces. This is about 3/4 of a cup. It doesn't have to be exact, just close. Add four cups of water and whisk until smooth.
  6. Pour the soup mixture over the chicken and broccoli. Bring to a simmer, reduce heat, cover and simmer for about 25 minutes. It will thicken but still be gravy like. Taste and adjust seasonings if needed. I wanted to add a little salt and pepper.
  7. Serve over rice with a sprinkle of grated sharp cheddar cheese.
